"One citrus was missing, the Pomelo (Pompelmo in Italian), to close this journey in Italy with scent. Mistakenly called grapefruit (UVA in Italian), it originates from Asia where it is revered and used as offerings to the Gods. It appears in Seville in Spain around the 12th–13th century like most citrus fruits and during the Arab rule, who were excellent travelers.
If it is the largest of the citrus, I love the Pomelo for its bitterness; bitterness is, for me, among the intelligent scents unlike sweetness, which I find easy and uninteresting. Perhaps due to my Italian background where bitterness is celebrated in many drinks. Here I worked not only on the bright, acidic freshness typical of Pomelo, but also accentuated the bitterness to distinguish it, to make it unique." Jean-Claude Ellena
