"One citrus was missing, the Pomelo (Pompelmo in Italian), to close this scented journey through Italy. Mistakenly called grapefruit (UVA in Italian), it originates from Asia where it is venerated and used as offerings to the gods. It appears in Seville, Spain around the 12th–13th centuries like most citrus fruits, during Arab rule, who were excellent travelers.
Although it is the largest of the citrus fruits, I love the Pomelo for its bitterness; bitterness is, for me, one of the intelligent scents, unlike sweetness which I find easy and uninteresting. Perhaps because of my Italian background where bitterness is celebrated in many drinks. Here I worked not only on the Pomelo's bright, acidic freshness, but I also heightened the bitterness to distinguish it, to make it unique." Jean-Claude Ellena
